Ashley Knotek

What started as an afterschool job ringing up customers, quickly turned into me running ovens, cranking out pies, and making dough for a small pizza chain in Seattle. I loved it so much I ended up leaving high school to pursue my dream of pizza making full time. I took some detours into the snowboarding industry, then the beer & marketing world, but eventually that led me back to my one true love, pizza. I started a food truck with my partner in 2021 that quickly grew into a locally loved Denver Brand, Outside Pizza. We now own a Pizza Shop in the Denver highlands that specializes in wood-fired sourdough pies, and seasonal specials. We employee 15 hard working individuals! Most of them women! We're so proud of what we have built, and can't wait to see what comes next.
