Delight in a light and crispy crust topped with a vibrant medley of seasonal vegetables including zucchini, asparagus, and peas, perfectly complemented by a sprinkle of fresh mint and a drizzle of lemon and stracciatella. Indulge in the essence of the Italian countryside with every delicious slice.
Dough Recipe:
In a large bowl mix flour and yeast together. Pour in water and using a woodenspoonstir until the dough is shaggy. Next mix in salt until incorporated.
Add olive oil andcontinue stirring until it is fully incorporated.Cover and rest for 20min. Turn dough onto a non-stick surface and apply one set ofstretch and folds using the envelope method. Then rest for 20min. Repeat stretch andfolds with rest two more times, for a total of three stretch and folds.
Rest the dough at room temperature for 1hr then roll into 650 gram dough balls.
After your dough balls are made let them rest atroom temperature for 1-2 hrs then place in refrigerate overnight.

Indulge in the traditional flavors of Italy, without compromising on taste or dietary preferences.
Gluten Free Pizza Dough: (Makes 3 pizzas)
Pizza Toppings: (for one pizza)
To mix by hand:
Tip! Use a glove to keep the dough from sticking while mixing
1) in a large bowl mix flour and yeast
2) add cold water to flour and mix continuously until most water is absorbed
3) sprinkle half of the salt and mix completely then sprinkle remaining salt and mix again. This will help prevent salt deposits
4) add half of the olive oil and mix then add second half of olive oil and mix completely
5) form a ball with the dough and leave it in the mixing bowl covered and sealed for 1-2 hours on the counter. Put in the refrigerator to rise if planning to use the dough later than 2 hours.
6) portion the dough into balls at 300 grams each. Cover in plastic wrap and put in refrigerator until ready to use.
Leave dough in refrigerator until ready to make.
Remove the gluten free dough from the sealed plastic wrap and press into a ball. Using rice flour, press out the dough using your hands or a rolling pin until the pizza is about 10 inches.
Ladle tomato sauce about an inch from the edge of the dough. Add basil, eggplant, roasted red peppers, parmigiano, and mozzarella. Drizzle extra virgin olive oil around the edge of the crust and in the center of the pizza.
Cook in wood fired oven until finished.

]]>Square by design, legendary by taste, experience a symphony of flavors with Sara Boyer’s Detroit Style Pizza, featuring a light, airy crust crowned with tangy tomato sauce, fragrant basil leaves, and savory sautéed mushrooms. Each bite delivers a perfect harmony of freshness and earthy richness that will tantalize your taste buds.
1. Place the Caputo “00” Saccorosso and Caputo Lievito Dry Yeast in the mixer and mix on speed 1 for 1-2 minutes.
2. Add the water and mix for 5 minutes.
3. Add the salt and mix for 10-12 minutes or until the dough is smooth and forms a pumpkin.
4. Remove the dough from the mixer and transfer it to a large container with a lid. Cover the dough and let it rest at room temperature for 12 hours.
5. After the dough has bulk fermented for 12 hours, divide and scale the dough balls into 270g balls and place them in dough trays.
6. Allow the dough balls to rest at room temperature for 6-7 hours before use.
7. If you’re not using the dough balls immediately, store them in the refrigerator. Remove the dough balls from the refrigerator 3-4 hours before intended use.
8. Stretch your pizza on a lightly dusted counter using Caputo Semola and add your favorite toppings. We recommend our Ciao San Marzano DOP Tomatoes, Ciao Whole Peeled Tomatoes, and/or Ciao Neapolitan Sauce recipe.
9. Transfer the pizza to a pizza peel and gently shuffle the pizza off the peel into your heated oven.
10. Once the pizza is in, start turning it every 20 seconds or so to avoid burning the cornicione. After approximately 60-120 seconds (depending on oven temperature), your pizza should be ready to be removed from the oven.
11. Slice, serve, and enjoy!

]]>In this 3-day intensive hands-on class you will learn the techniques needed to properly execute NY, Detroit, Grandma, and Sicilian style pizzas.
Pizza Chefs Leah Scurto and Laura Meyer will cover the dough-making process for both direct method and indirect method made with a poolish. You will gain hands-on experience for handling 2 different styles of pizza dough; an artisanal New York style and a higher hydration dough that is versatile for pan style pizzas.
Our instructors will discuss the cheese and sauce options to use for all 4 styles and demonstrate how to hand pull mozzarella and burrata.
